Let’s get creative with food! I love to experiment with ingredients that I have on hand to try and come up with new recipes. Here’s a simple pudding that went over really well with my family, so I thought I’d share it.
1 box vanilla pudding mix
1-2 cups mini marshmallows
1 small tub of whipped topping
1 banana, sliced (optional)
1. Using the amounts listed on the box of pudding mix, mix the pudding mix and orange juice (using juice here in place of milk).
2. Next, let it set up in the fridge. It will be a bit runny, but that’s okay.
3. Once set, fold in the whipped topping. stir in the banana slices and mini marshmallows, and enjoy!
A YUMMY VARIATION: use a can or two of crushed pineapple (pineapple and its juice) in place of the orange juice and add shredded coconut.
Pudding is a pretty easy and inexpensive dessert to get creative with. Try different pudding mix flavors, or try mixing the pudding mix with coconut milk instead of cows milk or juice.
