Cheeseburger Salad with Mustard Dressing

I’ve been cutting back on my family’s bread intake. In fact, I stopped buying bread and am limiting other bread products. So when I said that we were having cheeseburgers for dinner, there were shouts of joy. When I then said that they were bread-less burgers, there were instant whines and complaints. However, once they tried my cheeseburger salad, they were asking for seconds and asked if I’d make it again sometime!

Cheeseburger Salad
1 cooked seasoned beef patty, sliced into strips
1 handful mixed salad greens
1 handful grape tomatoes, halved
1/4 c shredded cheddar cheese
(Optional topping ideas: chopped hard-boiled egg, sliced pickles, crumbled bacon)

Mustard Dressing:
1/4 c mayonnaise
1 tbsp yellow mustard
2 tsp apple cider vinegar
1 tsp honey
water

To make dressing, whisk the first 4 ingredients together, adding water a little at a time until it reaches a pourable consistency. If the mustard or cider vinegar taste is too strong for you, just add a bit more mayonnaise.
This is a tasty dressing for fried eggs too, which I like to serve over fresh greens.
